This cellar has got fermentation vats which do not exceed 290 hectolitres that is to say 25 tons of grapes, it allows a strict selection (separate wine-making by grape varieties and sorting of the grapes) and an easier vinification.
The clarifying of the wines is made by gravity (to avoid pumping which is always very bad for wine), that is to say after their vinification, the wines are conveyed by pipes to finishing vats. Then, they will be housed by the same mean in underground vats until they are bottled or put in oak casks. |
