The selections are vinified separately in small vats according to the grape varieties, the soil and the vine age.
To improve the results of these selections, "Les Coteaux de Visan"cellar employ a viticultural technician who looks after the vineyard and advises the winegrowers about the viticultural methods they have to use in order to limit the treatments.
The success of this process is based on the winegrowers'work. To encourage their efforts, they are paid according to the quality of their grapes and are invited during the year to taste the results of the selections of the various parcels. So they can appreciate the differences of each parcel and the relation between the grapes quality and the wine quality.
"Les Coteaux de Visan"cellar make their wines according to the traditional method but they also use modern technics and their staff.is qualified.
Moreover, they own an old ageing cellar dug into the rock where "Saint Vincent" cuvée perfects its ageing in oak casks.
